Time needed: 1 hour.

Prep, roast, then grill

  1. Turn the oven to 400

  2. Prep the artichokes

Slice each end about half and inch, then slice the artichoke in half. Scoop out the hairy part with a spoon. Brush all sides with olive oil and lay flat part down on the roasting pan.

  3. Roast uncovered for 15 minutes

    Bake for 15 minutes uncovered.

  4. Cover in aluminum and roast for another 25 minutes

You can just loosely cover the artichokes in aluminum.

  5. Grill for 3-5 minutes

Grill until it has the perfect amount of char. Some like it light, some dark. Your choice!

  6. Serve with dipping sauce (or just lemon!)
