My husband and our friend laid down a chili challenge in the church parking lot. Then, we friends invited for a Sunday afternoon chili cook off. I wasn’t involved in the chili. However, I did make the best deluxe cornbread recipe on the planet.
Beans, no beans, secret ingredients, level of spice – no matter what your specific chili preferences are, I think we can all agree that cornbread is an essential sidekick.
And I have a cornbread recipe that will make all of your friends say “wow.” At least all of mine did…
My mother-in-law calls it deluxe cornbread. She uses a few more ingredients, and I use the Jiffy shortcut.
And yes, I serve it in a silver casserole holder. It is the South after all, ya’ll.
Who won the chili cook off? Both of the chilis were excellent, but the cornbread was the winner.

Easiest Deluxe Cornbread Recipe
Deluxe Cornbread
Ingredients
- Box of Jiffy cornbread
- 1 can of creamed corn
- 2 large eggs
- 1/4 cup melted butter
- 1 cup sour cream
Instructions
- Mix everything together with handheld mixer or Kitchenaid mixer "
- Bake it about 40 minutes at 350 in your favorite casserole dish so it is still a little doughy on the inside – which makes it more like a soufflé than traditional cornbread.
