So I’m in Orlando this week on a work trip and I am definitely the lamest traveler of all time. Instead of going out, I’ve taken advantage of my full kitchen at Vacation Villas FantasyWorld. There is a Publix about one minute away, so I’ve just kept the fridge stocked with breakfast food, snacks and have eaten my dinners in the condo when I haven’t been out for work. Tonight when I wandered into the grocery store for dinner, they had the station set up and were serving samples of this quesadilla bake. All of the ingredients were right there in the cooler and that was that.

Yes, I know that it’s weird I made an entire casserole for myself and that I chose to cook… however, I’m tired, didn’t want to sit at a restaurant, and just wanted to hang out in my little home away from home. One of the reasons I love staying in places like this is the living space is so comfortable and a kitchen is so convenient. (Shameless plug, I know, but I really do love the resorts my company manages!)

It took about 10 minutes worth of prep and 20 minutes to bake and it would feed 4.  I will certainly make this for my family.

Easy Quesadilla Bake Recipe

Ingredients

  • 1 1/4 pounds lean Ground Beef
  • 3/4 cup Store prepped salsa
  • 3 cups Mexican blend shredded cheese
  • 1/2 cup Green onions
  • Flour Tortillas (8-10 inch)
  • 1 packet of fajita or taco seasoning

Steps

  • Preheat oven to 400
  • Saute ground beef. When almost browned, add in the taco seasoning and salsa. Cook it through.
  • Layer in a 9 x 13 casserole dish: 3 tortillas on the bottom. Add half of the ground beef, then half of the green onions, then half of the cheese. Repeat. Top it off with 2 more tortillas. (I used 5 tortillas, but the recipe calls for 8.)
  • Cover with foil. Bake for 20-25 minutes.
  • Enjoy!
