Inspired by Callie’s Hot Little Biscuit BLT, let me introduce the roasted tomato BLT.
Why roasted tomatoes? WHY NOT.
Unless you have a garden fresh tomato, a lot of grocery store tomatoes are kind of bland.
Roasting grape tomatoes with Kinder’s the Blend and olive oil gives this BLT a little extra flavor.
Everything about this BLT is a little extra, actually.
Jordan Olive Oil. Basil from the Garden. Sea Salt. Pane Italiano Bread. Extra thick bacon. Lemon in the Duke’s Mayo.
The little details come together make this an extra special BLT.

Wines to pair with the Roasted Tomato BLT
I like a light Chardonnay, Sparkling, or Fume Blanc with bacon. Rosé is always a good choice in the summer, too! You can find these wines at Walmart.

Here’s how to assemble the roasted tomato BLT:

Ingredients
- Thick Cut Bacon
- Pane Italain Bread
- Arugula
- Duke's Mayo
- Lemon
- Basil
- Grape Tomatoes
- Olive Oil
- Great Olive Oil (Jordan is our pick)
- Kinder's The Blend Seasoning
Instructions
- Drizzle olive oil and Kinder's The Blend on halved tomoatoes. Roast at 250.
- Cook the bacon.
- Mix mayo, a little lemon juice, and chopped basil.
- Mix arugula with Jordan olive oil and sea salt.
- Toss the arugula mix with roasted tomatos.
- Toast bread.
- Spread mayo mix, layer on the arugula tomato concoction, and bacon in between toast.
- ENJOY.
