Not everyone loves mushrooms. I happen to LOVE mushrooms. If listed as an ingredient on a menu, mushrooms are the thing that will prompt me to order. The other day, I was feeling creative plus a little lazy and came up with this mushroom on toast dinner. The mushrooms give it a hearty, rustic flavor that make this dish suitable for dinner or an excellent wine snack 🥂
Fancy Mushroom Toast
An easy lunch or wine snack
Ingredients
- Mushrooms
- Arugula
- Really good panini bread
- Cheese (Gruyère is a good choice, also mozzarella obviously, and any good melting cheese)
- Lemon
- Olive oil
- Red pepper flakes
- Salt
Instructions
First, sauté the mushrooms.
Toss the arugula with really good olive oil, salt, and lemon juice.
Then, toast the bread in the oven at about 350.
Add the cheese on top.
Bake for a few more minutes.
Finally, add the greens to the top of the mushroom toast.
Sprinkle red pepper flakes and Parmesan to the top.
Slice with a fork and knife, enjoy!
