This is a great recipe to add when you have the grill fired up for dinner. Snack on this appetizer while you’re preparing the rest of your dinner!
An easy way to grill artichokes
Some recipes for artichokes take a lonnnng time to make – but roasting them first and then tossing on the grill for a few minutes is a simple and quick way to make this artichoke appetizer.
Time needed: 1 hour
Prep, roast, then grill
- Turn the oven to 400
- Prep the artichokes
Slice each end about half and inch, then slice the artichoke in half. Scoop out the hairy part with a spoon. Brush all sides with olive oil and lay flat part down on the roasting pan.
- Roast uncovered for 15 minutes
Bake for 15 minutes uncovered.
- Cover in aluminum and roast for another 25 minutes
You can just loosely cover the artichokes in aluminum.
- Grill for 3-5 minutes
Grill until it has the perfect amount of char. Some like it light, some dark. Your choice!
- Serve with dipping sauce (or just lemon!)
