If I’m going to eat a salad for lunch, it had better be both tasty and substantial.
I live around the corner from where I work, so it’s easy for me to go home for lunch – but these would be easy to assemble and take with you to work, too.
First up: we’ll call this one Crunchy Citrus Sweet Cobb, because every great salad needs a great name.
Crunchy Citrus Sweet Cobb
This is my favorite. Inspired by my favorite salad of ALL TIME from Lola’s in Charleston, WV. I made a version last year which is my most pinned recipe but this one with more chopped things is way better.
Here’s what’s in it: leftover chicken, cran raisins, roasted sweet potatoes, feta cheese, chopped cucumbers, red grapfruit, lettuce, and avocado. Tossed in greek dressing.Â
I made this one twice – once with greek vinaigrette and the other time with ranch. Both were excellent.
Ranch version of the same salad, with even more alliteration.

Really – is any dish not enhanced by ranch dressing? Let me answer that redundant question for you: no. Ranch makes everything taste better.
Next up is a version of panzenella with chicken sausage. An odd combo – and it was by accident – but delicious. I had leftover chicken sausage and french bread from dinner the night prior so I tossed it in. I won.
Panzenella with Chicken Sausage
Balsamic vinaigrette dressing + kalamata olives + cherry tomatoes + chicken sausage + spinach + feta + french bread
And then there is my infamous crab guacamole… I posted this recipe a few years ago, and my friend’s mom made it, and said it’s her kids’ favorite but it requires “three month’s salary worth of crab meat” to make it for everyone! Ha. The original “crab, tomato & avocado salad” is crab meat + olive oil + jalepenos + fresh lemon juice + avocado + red onion over sliced tomato. I reluctantly omitted jalepeno because I’m nursing and don’t want to mess up my baby girl’s digestive tract.

What’s your go to lunch? I always love ideas – especially for salads. I never would have thought to add roasted sweet potatoes to a salad had I not ordered it at a restaurant, and now it’s my favorite!
