If you suggested that a lima bean and green olive salad was “delicious,” I’d probably not believe you… however, this simple side really is fantastic – if you like olives.

My Grandmother’s Lima Bean & Green Olive Salad Recipe


  • Jar of green olives
  • Frozen lima beans
  • Mayonnaise (Duke’s is my preference)


  • Make the lima beans according to the directions, adding in butter, salt & pepper if you wish.
  • Cool the lima beans after they are cooked.
  • Slice up the olives.
  • Mix up about 1.5 tablespoons of mayo, some of the olive juice from the jar, lima beans, and the olives – and you’re done!

This makes an easy side to keep in the fridge to have it lunch – but we’ve enjoyed with grilled grouper, pork chops & fried chicken this summer.
