Few things in life are better than tomato soup and a grilled cheese on a fall day. Here’s an easy Vitamix tomato soup recipe that’s fun to make on a weekend. The star ingredient is the caramelized onions, which is the longest part of the process. The rest of the recipe just requires dumping ingredients into the blender and blending!!
The secret ingredient to the crispiest grilled cheese is MAYO. (This method is chef-recommended, however, I disagree with the author on the brand… Duke’s is the best mayonnaise!)
Easy Vitamix Tomato Soup
With caramelized onions and garlic
Ingredients
- 2 cans diced tomato
- 1 onion, thinly sliced
- 5 cloves garlic
- Handful of basil
- 1 cup chicken stock
- 1/4 cup cream (or to taste)
Instructions
- Caramelize onions with whole cloves of garlic: add olive oil to the skillet and cook on low for about 40 minutes until they have a pretty caramel color.
- Add everything to the blender, except the cream. Blend until mixed. Add cream and blend again.
- Heat up on the stove (or you can blend until it’s hot but that takes awhile and it’s LOUD.
Notes
Serve with grilled cheese!
