Oh, Costco… I love you so. I’m always curious what other people eat and buy from Costco, so I thought I’d share a few recent favorite Costco finds.
Burrito Bowls
This takes seconds to assemble and is tasty & filling. I just mix the cauliflower rice and a packet of the black beans, then slice jalepenos on top and drizzle the dressing over it. Also I get the pre-made guacamole from Costco, too. It’s delicious but I’d probably get the little individual cups rather than the three big ones next time since I’m the only one in this house who likes avocados.
Frozen Açaí bowls
Açaí is loaded with antioxidants which do something healthy for you. These little bowls are delicious and crunchy and I love coconut. These are excellent for a desk breakfast / snack. Keep in the fridge and let thaw or you can microwave.
Garlic Butter Shrimp
Found this in the frozen section and thought, “why not?” We mixed it with zucchini and noodles. Even the kids loved it, which is a rare and seriously incredible find. No need to add sauce – it’s all part of the frozen shrimp. We made the entire thing for three adults + 2 kids with leftovers, so I’d probably just use half the bag for one meal the next time. This is a great thing to keep in the fridge for nights you’re tempted to do takeout – it’s delicious and it only takes a few minutes to make.
Chicken salad and multigrain chips
So this is actually not the Costco chicken salad in the photo, but I did get the chicken salad and it passes my extremely picky chicken salad standards. There are only two others that do: Fresh Market and Croissants. I don’t like funky chicken, plus I like a little crunch. The multigrain chips come in a gigantic bag and are a great cracker or to use for dipping. This will be in the office desk lunch rotation when I head back to work.
Perfect bars
These refrigerated peanut bars are close to the fruit & bakery section at our Costco. They are delicious. We were buying these from the grocery story (not cheap) and were excited to find at Costco. I like all of them. Thomas’s favorite is the chocolate and Will’s favorite is the peanut better. They are super filling and make a great grab-and-go breakfast or lunch.
