I don’t know about you, but I love appetizers for dinner. I also love to prepare something simple than follow a 400 step recipe. If you’re looking for the wow factor sans a whole lot of effort for a wine party, smoked salmon with dill dip and blinis is elegant, easy, quick, and delicious.
Make dill dip and blinis in the afternoon. 5 minutes before your friends arrive, take out a pretty platter and add smoked salmon (party pack from Costco for the win!), lemon, and the dill spread and you’re in happy hour business. Open the wine.
Here’s how to make this simple smoked salmon with dill dip and blinis appetizer:
1. Make the Blinis
First up: blinis.
We have a griddle on our Jenn-Air stove and it is honestly the coolest kitchen gadget we added when we built our home. I made them in the afternoon and put them in the fridge for later.
Easy Blini Recipe: I used this easy blini recipe. Blinis are tiny little pancakes made up of ingredients you probably have in your pantry – and this recipe is a little bit addictive.
2. Make the dill dip
Honestly, I just made this up as I went and didn’t measure, so everything is to taste. Just make sure it’s creamy and not runny.
- Cup of plain yogurt or sour cream
- chopped fresh dill to taste
- juice of 1/2 of a lemon
- 1/2 tablespoon of olive oil
You could use plain yogurt or sour cream for this. Just mix in fresh dill, half of a lemon, about a cup of plain yogurt or sour cream, then about half of a tablespoon of olive oil. (We love Jordan Olive Oil.) Drizzle olive oil and add sprigs of dill on top to make it pretty.
3. Stack the platter
Pretty white platters always make for a pretty presentation. (HomeGoods is the best spot to shop for these! Also, picked a few you can buy online at the bottom of this post.)
- Blinis
- Dill dip
- Lemon Wedges
- Smoked Salmon (ours is the party pack from Costco!)
4. Open the sparkling
The wine to drink with smoked salmon: Gloria Ferrer Brut Rosé or Sonoma Brut, available at most grocery stores.
