Welcome to the lamest blog post quite possibly ever because I have one point to make and I’m not going to spin it longer than necessary. This could have been an instagram post.
What’s not lame? Sweet potatoes in a salad.
I roast sweet potatoes and store in the fridge to throw in salads for lunches, and it’s a gamechanger. It’s a packed lunch I actually want to eat. Full dislosure: I don’t do this often enough, because I rarely pack my lunch. But when I do, I take 10 photos so I can share it right here on this blog for more organized people to fulfill my best intentions.
The one in the photo is peanuts + cabbage + shredded carrots + thai peanut sauce.
The easiest thing to do is get a bagged asian salad from the grocery store, add cold roasted sweet potatoes and call it a lunch.
Another salad idea: feta + lettuce + balsamic + mandarin orange slices or strawberries + sweet potatoes
Try it: sweet potatoes in your favorite salad instead of chicken or shrimp or steak – it’s surprisingly filling and tasty. What can I say except you’re welcome?
