A sweet potato breakfast hash may seem like an odd recipe to suggest for the morning. But it is damn delicious, and definitely one to add to your mix.
After we’ve declared “NO MORE YOUTUBE” to our children and we’ve had them read, brush their teeth, etc. etc…. my husband and I watch the YouTube on our television. Lately, our favorite channel is Sam the Cooking Guy.

He is entertaining and everything he cooks looks incredible and fits my criteria of a recipe I’ll actually try: uncomplicated and not weird.
We’ve made three of this recipes this week: cottage pie (basically a shepherd’s pie with ground beef instead of lamp / insanely tasty even if you sub potatoes with mashed cauliflower) chicken bacon ranch sandwich (don’t skip grilling the bread!), and this sweet potato hash.
I used frozen sweet potatoes and a frozen fajita mix, which allowed me to skip the prep. Next time, I’ll crack the egg on top and throw it in the oven at 400 instead of frying it.
Bon Appétit, y’all… this is definitely one to try on a lazy weekend morning!
