Diet Bar Food? Could there be such a thing? Yes, and I can attest to the taste that these two recipes pair well with a good craft beer, and definitely don’t resemble diet food.
Last week, I discovered SkinnyTaste.com, which is an incredible food blog with healthy, family-friendly recipes and I want to try them ALL. I tried two last week, and was very pleased. They are homemade diet bar food: chicken fingers and buffalo bites. Both are healthy, and both are delicious.
Healthy Baked Chicken Nuggets took about 20 minutes to assemble and bake, and I will be adding this to our weekly line-up of meals. The Italian seasoning added great flavors and the texture was crunchy (but not greasy!) We dipped in ketchup or barbeque and served with Annie’s Alfredo Shells & Cheddar (yum), corn & broccoli. Easy, quick, delicious. I will also be throwing these nuggets into pasta for a healthy-ish chicken Parmesan. Also, I think they would be great with lemon juice on top and tossed in a Greek salad. I had them cold the next day for lunch and they were still tasty.
The second recipe is a serious winner, and did not taste like “diet food”, I promise: Buffalo Cauliflower Bites. It was also easy and full of flavor and quite honestly, I’d rather have this than buffalo wings because there were not gross bones or grease. The roasted cauliflower was somehow meaty and did not taste like cauliflower after it was drenched in Frank’s Hot Sauce.
Though not kid friendly, it was the perfect pre-dinner appetizer. I also have a recently new found obsession with Zaxby’s buffalo chicken salad, and I think the buffalo cauliflower would be fantastic tossed in a salad with blue cheese. And texas toast, of course.
