I’m pregnant. This is my excuse for waking up on Thanksgiving morning and deciding that a french toast casserole with berry compote was the thing I had to make for breakfast. Calories don’t count on Thanksgiving.
I did what I always do and Googled “Easy French Toast Casserole with Berry Compote Recipe” and discovered a very simple and incredibly delicious french toast casserole recipe and then another easy berry compote recipe from the Food Charleton’s Cream Cheese French Toast Casserole. I had all of the ingredients, and merged the two recipes to create my breakfast, which was really just a divine dessert disguised as breakfast food.
I basically followed all of the instructions except had a few variations. I only made half of the recipe, and I used half and half instead of cream and 2% milk instead of whole milk because that’s what I had in the fridge. I also didn’t have French loaf and used white bread from a local bakery. Note: my son didn’t like the “white stuff” (cream cheese) and you could easily omit the cream cheese in this.
I used my red Kitchen mixer to make this recipe. If you don’t have, it’s a great item to add to your Christmas list. It looks pretty in the kitchen and it’s fun to use. My son loves to help me make cookies, chocolate chip pumpkin bread, and anything else in the mixer.

Then, I made a berry compote which was so easy! I used frozen berries, added a few table spoons of water, a tablespoon of sugar, and let it simmer for about 10 minutes.
French Toast Casserole + Berry Compote = Success. Definitely put these two together. I’m making this again on Christmas morning. And any time I ever decide to have anyone over to brunch.
