As I assembled this Brussels sprouts salad, my thoughts were punctuated by exclamation points: How cool blogger of me! An Instagram-worthy lunch! The lighting is fantastic at noon in our house!
I didn’t expect to actually love this Pinterest-worthy creation as much as I did.
Brussels sprouts are an unexpected exchange for lettuce in this salad – but it works because they are crunchy, yet bland. I added strawberries, feta cheese, and crunchy things then tossed with a raspberry vinaigrette dressing, which is a little sweet, and I think that’s the key.
It takes seconds to put together, and that’s my kind of lunch.
Ingredients
- Chopped Brussels sprouts
- Feta cheese
- Strawberries
- Raspberry vinaigrette
- Wasabi crunch mix (I found this at the grocery store, loved it)
I saw a bag of pre cut Brussels sprouts and it was so unusual, I put it in the shopping cart without a solid plan. Although, it would perfect for Brussels sprouts hash browns, which I could make if I hadn’t used the whole bag on salads all week. You could easily chop Brussels sprouts but having a bag of them pre-cut makes this recipe effortless.
