NEVER walk into a grocery store hungry. That’s a life rule no one should break. I do routinely, but yesterday, I actually had a quasi-hatched plan forming when I walked through the automatic doors and rather than waste time and ponder the “what do I want to eat for lunch” too long, I pulled out my phone, found my healthy food inspiration board and clicked on this recipe for buffalo shrimp tacos via Barbells & Bellinis. Her version grills the shrimp – which would be delicious – but I just had the grocery store steam the shrimp so the only thing I had to do was chop & assemble.

My neighbor friend came over and we attempted to catch up while half paying attention to the conversation and the other half of our attention fine-tuned to our kids.  These shrimp tacos were the perfect thing to throw together for an impromptu get together: big on flavor, no cooking required, and clean-up was minimal.

Adapted from Barbells & Bellinis shrimp taco recipe

Buy:

  • 1/2 pound shrimp (I had the grocery store steam it)
  • 1 avocado
  • celery
  • blue cheese
  • tortillas

To make:

I mixed the cooked shrimp with Frank’s Hot Sauce and then added chopped celery, avocado, and blue cheese on a tortilla. It took about 5 minutes to put it together – the perfect lunch. It made 6 tacos.
